About Our Chef

Chef Anthony Minniti, Jr. was introduced to cooking at an early age. After helping his grandmother in her Southern California café, he realized quickly that his interest in cooking had developed into a passion.

After working his way through the ranks in several renowned kitchens in the San Francisco Bay Area, Anthony enrolled in the prestigious Culinary Institute of America in Hyde Park, New York, considered by many professionals to be the most esteemed cooking school in America. Anthony excelled in the Institute’s curriculum and was awarded a coveted fellowship position to open the much-anticipated West Coast campus of the Culinary Institute of America in Napa Valley.

In Napa, Anthony worked at some of the most celebrated restaurants in the Valley, including Auberge du Soleil, Celadon, and Bistro Don Giovanni. Continuing his goal of exceeding guests’ expectations of quality flavors and wine pairings, Anthony created the Napa Valley Cooking Company, where he offered wine pairing dinners, private events, and hands-on instruction.

Chef Minniti has spent the last fourteen years on the Central Coast of California working at Santa Barbara’s Fess Parker Wine Country Inn, Willows in Santa Ynez, and as a private caterer for some of the region’s most discriminating food and wine connoisseurs.

His long-term passion is evident in his inspiring interpretations of flavor through food and wine offerings at Blue Moon Over Avila.
